Abstract
Lecithin is a generic term to designate any group of yellow-brownish
fatty substances occurring in animal and plant tissues composed of phosphoric
acid, chroline,
fatty
acids, glycerol,
glycolipids,
triglycerides,
and phospholipids
(e.g., phosphatidylcholine, phosphatidylethanolamine, and phosphatidylinositol).
