The phytochemical analysis of the leaf extract showed the presence of tannins, saponins, alkaloids, soluble carbohydrates, flavonoids, reducing sugar, steroids, cyanide and terpenoids. Abstract Bullet pear (Canarium schweinfurthii) fruit oil was used as a replacement for bakery fat in bread production.
